Bake and decorate a simnel cake in a small-size baked bean tin
12 small baked bean tins (or similar)
175g caster sugar
3 medium eggs
225g plain flour
1 tsp baking powder
1 tsp mixed spice
350g dried mixed fruit
grated zest and juice of 1 orange
50g almond paste
325g almond paste
Preheat oven to 160C, gas mark 3
Grease and line 12 tins
Beat butter, eggs, flour and sugar until smooth
Add baking powder, spice, fruit. orange jice and zest
Divide between the 12 tins
Cut the 50g block of almond paste into 12 cubes and push one into each cake.
Bake for 40 mins or until golden and firm
Turn out of the tins and allow to cool for at least 20 mins
Roll out remaining almond paste and cut into 12 rounds.
Cover each cake with almond paste
Use remaining almond paste scraps to make 11 small balls for each cake and place on top.
