Easy, no-cook recipe.
Resources
Assorted berries, granola/crunchy oat cereal/muesli (optional), low-fat natural yoghurt. Bowl, colander, small sharp knife, fork, rolling pin (optional), zip lock bag (optional), clear plastic cups (to save time, I had mine already labelled with each child's name), teaspoons for serving (if eating there and then)
Instructions
Wash fruit. Save one whole strawberry per child to decorate. Hull remaining strawberries. Mash berries with fork or potato masher to make a rough puree. If using granola, place in a ziplock bag and crush with rolling pin to make smaller.
Fill cups with layers of berry puree, natural yoghurt and crushed granola. Finish with yoghurt layer and decorate with a whole berry.
For quantities, the recipe I used gives the following: 150g each of raspberries, strawberries and blackberries, 150g granola, 400ml yoghurt. This is supposed to serve four but will stretch further if using the small disposable plastic cups.
Please note: running time is based on a small group of 4 - 6.
