Make meringue kisses
Ingredients (see below)
Measuring spoons and cups
Piping bag (optional)
1 egg white
½ t white vinegar
1/3 cup caster sugar
1 t icing sugar
¼ cup cream
2 t icing sugar (extra)
Preheat oven to very slow (120 degrees celsius or 100 degrees if fan-forced).
EITHER: Grease oven trays then dust with cornflour and shake off excess OR line oven trays with baking paper.
Beat egg white, vinegar and caster sugar with electric mixer for 10 minutes or until sugar is dissolved. Fold in sifted icing sugar.
EITHER: Place merigue mixture in piping bag fitted with small plain tube and pipe 1.5cm rounds 3cm apart on trays OR Gently spoon 1.5cm rounds 3cm apart on trays.
Bake uncovered about 30 minutes or until crisp and dry. Cool on tray.
Beat cream and icing sugar until firm peaks form.
Sandwich meringues together with whipped cream.
