Description

Damper recipe for units that have members who are gluten and /or dairy free. Researched and developed by Sharon Milne (one of the parents in our unit).
Serves 4.


Resources

1 cup of Masa Harina (important it is this kind of cornflour as it is traditionally prepared and
behaves differently to standard corn flour, found at pak’n’sav and bin inn)
5 tsp tapioca starch
1 tsp baking powder
3 tsp sugar
1 tsp cinnamon
1/2 tsp all spice
(the spices nicely balance the strong taste of the flour)
1/2 cup of So Good almond/coconut milk (another milk substitute would probably work but this is
what i used)
1 tbsp coconut oil

Instructions

Add all dry ingredients together then slowly add, and mix, the milk in until you have a dough. You
may not use all the milk. Kneed dough well until all stuck together and you can make a ball. Divide
into 4 and roll into long snakes. Wrap thinly around your stick. This will take patience. I found it
easiest to leave the dough on a flat surface like your plate and roll it onto the stick. Whatever
works! Once secured to stick coat in melted coconut oil, fingers work best. Then cook turning
slowly. Enjoy
