Description

Chinese New Year is a good excuse to have a feast. Here is a main dish which can be cooked in a scout hut.

Equipment
Stoves, a small bowl, a small saucepan, a wok and cooking oil, stirring utensils, measuring cups, chopping board, knife, teaspoons, tablespoons
Ingredients
Water, corn flour, vinegar, ketchup, dark soy sauce, bell peppers

Instructions

The Sauce
Chop bell peppers into chunks

Measure out the first of the ingredients for the sauce

3 teaspoons of corn flour.
Put this into your small bowl

Measure out 1 cup water. From this cup take out 4 teaspoons of water, measuring them into the small bowl and mix it with the cornstarch

Put the rest of the water into your small saucepan and add the following

¼ cup sugar
3 tablespoons of vinegar
¼ cup ketchup
1 tablespoon dark soy sauce

Heat and stir, bringing to the boil.
Add some chopped pepper chunks

This bit can go wrong easily. Re-stir the small bowl of water and corn flour. Don’t pour it all in at once. Add this a little at a time, stirring the main sauce constantly.

That is the sauce done. If using it as a dipping sauce, you are done but if this is part of the main dish, set it aside until the meat/vegetables are fried.

Main Dish

Nb. This could be vegetables or a different meat, depending on your preference.

We’re going to use chicken
Chop chicken breast into chunks. Heat oil in a wok and stir fry the meat.

Once the meat is sealed, add the sauce to the wok. You can also add extra ingredients, such as bamboo shoots, mange tout and pineapple chunks.

With chicken, you should cook for about 20 minutes. If you have a lid for your wok that will help at this point. If not, and it looks like the dish might burn or dry out, add a little water, as you go.

Serve with other Chinese foods, such as egg fried rice, crackers, spring rolls, stir fry vegetables and chow mein
Eat and enjoy
Wash up, dry up, put away and tidy
