Purple Cabbage Water
Small clear cups
Vinegar
Straws

Instructions

1. Boil purple cabbage in water until the cabbage is soft,
then drain the water. It should be dark blue/purple but
not too dark.
2. Pour a small amount of cabbage water into three clear
glasses.
3. Blow (a lot) into through a straw – creating CO2 - water
changes to a blue colour.
4. Control – water stays the same as nothing is added.
5. Vinegar is added – acid changes the water to a pink
colour.
6. The colour change of the water simply demonstrates
the impact both CO2 emissions and acidification have
on our water system.
