Description
Quick baguette, or similar, based pizza cooked in foil above hot coals, using ready-made toppings.

Equipment
- Hot Fire Coals
- Wire Grate
- Aluminium Foil
- Large bread knife
- Chopping board
Food
- Part-baked baguettes (twin pack) (1 baguette per person)
- Jar of Pizza Sauce (1 per 2 ppl)
- Grated Mozzarella, or other, cheese.
- Toppings: pepperoni, pineapple, peppers, olives, onions, cooked ham, cooked sliced sausage, etc.
Instructions
Light a fire large enough to sit under the entire wire grate. This should burn down to hot coals while you are making your pizzas.
Wash hands
1. Cut 2 pieces of foil, large enough to overlap the wire grate.
2. Cut the baguette horizontally across the middle, along the full length and open out the two halves.
3. With your fingers, make a shallow trough by scooping out some of the bread from inside the baguette halves.
4. Spread a thin layer of pizza sauce on the inside face of the baguette halves.
5. Add a thin layer of grated cheese.
6. Add two, or three, toppings, as there is not much room for more.
7. If the fire has burned down to hot coals, lay the wire grate on top of the coals.
8. Lay the baguette halves directly on the grate.
9. Lay the first piece of foil, shiny side down, across the baguettes, then lay the second piece, shiny side down, across the first. Do not wrap or pin down the foil, unless it is windy.
10. Monitor the pizzas every 5 minutes until the bread is the desired colour (not burnt) and the cheese is melted. NOTE: Par baked baguettes usually take 8 minutes to bake in a conventional oven.
