12g sugar
43g plain flour
½ tsp vanilla essence
8 clear mints/boiled sweets
Equipment
Mixing bowl
Wooden spoon
Sealed bag
Rolling pin
‘Magnifying Glass’ template
Blunt knife
Greaseproof paper

Instructions
Leader Preparation
A leader will need to print and cut the ‘Magnifying Glass’ template.
1) Mix all the ingredients together, apart from the boiled sweets, to form a soft, smooth dough.
2) Place the clear mints/boiled sweets into a sealed bag. Crush the mints/sweets with a rolling pin into small pieces.
3) Roll out the dough to about ½ cm thick. Place the magnifying glass template on the dough and use a knife to cut around it, and the middle circle.
4) Place the magnifying glass biscuits onto greaseproof paper on a baking tray. Sprinkle the crushed mints/boiled sweets into the circle up to the rim of the magnifying glass.
5) Bake at 180 degrees for 12-15 minutes, until the mints are melted, and the dough is golden brown.
6) Allow the biscuits to cool completely on the tray before lifting them off, so they have time to set, and the mints cool.
