Making small/mini Christmas puddings using microwave

Resources

Printed out recipes
Microwave oven/s
Small, microwave-safe, plastic pudding basins with lids (1 per Scout or however many you intend to make !)
Scales for weighing (or weigh out at home beforehand if time is going to be a problem)
Ingredients (see below)
Cling film
Knives, spoons - lots of spoons ! ! ! - mixing; tea; table; dessert etc.
Chopping boards
Mixing bowls
Bowl, plate, mug, saucer etc. to break eggs into
Washing up equipment & tea-towels
Christmassy fabric or wrapping paper
Ribbon
Gift tags if desired

Instructions

This recipe makes enough for 4 x ¼ pint puddings. (Or 5/6 of the very mini basins)

INGREDIENTS

50g butter
50g plain flour
1 teaspoon mixed spice
75g fresh breadcrumbs (white or brown - but brown is better) (NOT the breadcrumbs you buy to coat fish in !!!!!!!!!!! )
100g soft dark sugar
375g mixed fruit and peel
50g dates (chopped up a bit if they are whole)
50g glace cherries (cut into ¼s)
2 eggs
2 tablespoons black treacle
1 tablespoon golden syrup
50ml orange juice

Bit of extra butter to grease the basins

METHOD

1. Put the flour, sugar, bread and spice together in a large mixing bowl.
2. Stir well to distribute spices.
3. Add all the fruits and mix together well.
4. Add butter, eggs, orange juice, treacle, syrup
5. Stir until all ingredients are thoroughly mixed.

Remember to have a wish after your first stir !

6. Lightly grease pudding basins and share mixture equally.
7. Cover each basin with loosely fitting cling film.
8. Microwave on medium high (700 watts) for 3 minutes.
9. Have a look.
10. Microwave on medium high (700 watts) for further 2 minutes.
11. Leave to cool.
12. Wash up.
13. Put lids on puddings.
14. Wrap and tie with ribbon.

This pudding develops a lovely flavour on standing for a couple of weeks.

To heat on Christmas day, turn pudding out of basin and place on a microwave-proof plate. Use the basin as a lid and heat through for 1.5 minutes on medium high power. Transfer to the table, remove lid, pour over cream etc. and enjoy!

OR - you could steam them for ages if you want !!!!!!!!!!!!!

RISK ASSESSMENT: Check microwaves are working correctly. : Usual precautions with sharp knives etc. : WARNING ... if Scouts are tempted to eat these immediately they will be VERY hot on the inside, warn them.
