Yummy chocolate truffles
Plain vanilla or chocolate sponge, cocoa powder, apricot jam, chocolate sprinkles, truffle cases
Crumble the cake into a bowl, add 1 - 3 tbls cocoa powder and mix thoroughly. Add enough apricot jam to bring the cake crumbs together (be careful not to add too much jam at once!). Take a teaspoon size of the mixture and roll it into a ball ensuring the mixture isn't too dry or too sticky! Roll the truffle in the chocolate sprinkles and place in a truffle case.
