Description
Cook a three course vegan meal. Ideally using an alternative form of energy (haybox, solar cooker). Discuss impact of meat consumption on carbon footprint
Resources
Cooking utensils (chopping boards, vege knives, saucepans, frypans, mixing bowls etc)
Microwave safe containers (if using)
Food
Haybox, solar cooker etc (if using)
Stove, microwave, gas cooker etc
Girls to bring ditty bags
Instructions
Split unit into patrols to cook, (different patrols could cook different courses)
Make sure you allow time for eating
Lots of recipes that you can use
Ones we used this time:
Vegetable Soup
2-3T oil
3 cloves garlic
1c unsweetened almond milk
2T lemon juice
salt
1t herbs
4 cups diced potato
2 cups sliced mushroom
2 cups sliced onion
1 cup chopped carrot
1 cup chopped celery
4 cups vegetable stock
pepper
Heat oil and the saute garlic for one minute
Add rest of ingredients and bring to the boil then simmer for 30 minutes.

Bulgarian Beans
1-2 onions
1-2 cloves garlic
2-3 cans mixed beans
bunch of leafy greens like kale or spinach (alternatively half a bag of frozen spinach)
Canola oil
3-4T Smoked paprika
3-4T Dried parsley
Black pepper
Spring onions
Chilli flakes (optional)
Chop onion, garlic and greens.
Fry onion and garlic until soft and slightly browned.
Add leafy greens and fry until soft.
Add beans with all liquid, smoked paprika, parsley, pepper and chilli flakes.
Stir well and bring to boil. Reduce heat to medium and continue cooking for five minutes (or longer to thicken to desired consistency) stirring frequently. Add finely chopped spring onion for last minute of cooking.
(Frypan or microwave)
If cooking in microwave:
Add oil with onion and garlic to microwave safe dish.
Cook for 30 seconds.
Add beans, paprika, parsley, pepper and chilli flakes. Stir well then cook on high for 5 minutes (check during cooking several times and stir)
Add leafy greens and spring onions at end and mix in.

Fruit Crumble
2 apples
2 pears
Other fruit
2-4T water
Chop fruit and add to microwave safe container with water.
Cook in 2 minute burst on high power until fruit cooked.
½ cup Oats
½ cup walnuts
5-6 Dates
Finely chop dates (as finely as you can).
Mix with oats and nuts.
Sprinkle crumble topping over stewed fruit
