Based on the Japanese Pillow fighting tournament

Resources

Marked out playing area - or large mats
small cushion/pillow per player
1 blanket/quilt per team

Instructions

Adapted slightly from official Japanese tournament rules:

2 equal teams lie down in their area, heads on pillows. when whistle blows both teams jump up and begin throwing pillows at each other.
Each team has 1 defender, who deflects the pillows using a quilt/blanket
If a pillow hits a player on the other team, that player is out (or score points to avoid children sitting out)
If a team shouts "teacher's coming" they all have 10 secs to grab a pillow and lie back down. Whistle blows to start again.
