Flour -200 g
Eggs -2
Milk - 125 ml
Salt - 1 pinch

Elderflowers - 16
Vegetable oil for deep frying
Coconut sugar (as the best healthy option) or Icing Sugar / Brown Sugar for dipping once cooked

Preparation time - 10 minutes
Cooking time - 10 minutes

PREPARATION
HOW TO MAKE ELDERFLOWER FRITTERS
To prepare the elderflower fritters first whisk together the flour, eggs, salt and milk in a bowl until smooth.

Heat the oil in a deep fat fryer or large heavy-based pan. A Dutch Oven works well

Dip the elderflower sprays in the batter then drop in the hot oil, a few at a time and fry until golden.

Dust the elderflower fritters with icing sugar and serve hot.
