Description

Ice cream is a solid, a liquid, and a gas all at once -it is a combination of solid ice crystals, liquid milk fat, and air bubbles. Making ice cream is a fun and easy way to investigate how matter is changed by heating and cooling. As they make their ice cream, girls also gain experience in carrying out investigations and trying out a new recipe!


Resources

 250ml light cream
 2 tablespoons sugar
 ½ teaspoon vanilla extract
 ICE
 Salt
 2 freezer bags – one small, one large
 Teaspoon
 Tablespoon
 Measuring jug
 Tea-towel

Instructions

Instructions
1. Mix the sugar and vanilla extract with the cream in the measuring jug.
2. Pour the liquid mixture into the small freezer bag.
3. Half fill a larger freezer bag with ice and add a tablespoon of salt to the ice – shake it around.
4. Place tied off smaller bag inside the large bag (if this is being done at an “in person meeting” a couple of bags may fit into the big bag.
5. Shake the bag vigorously for about 10 minutes – pairs or parents (if online) may help! Have a tea-towel available as the outside bag gets very cold!
6. Have the girls monitor the state of the mixture at the start, monitor the changes of the colour and texture over the course of the next 10 minutes of shaking.
Note how when it is liquid it takes the shape of the container and after 10 minutes it becomes more solid.

Eating ice-cream note - there will be salt on the outside of the ice-cream bag so be careful not to mix it in with the ice-cream!
Science note: Adding salt to ice lowers it’s melting point – the ice absorbs heat from its surroundings – i.e. the ice cream mixture – which allows it to freeze.
