Description

Scouts will individually make a banana loaf cake in their own kitchens over zoom (you could do this in the scout hut if you have enough oven space).

We have run this with one scout leading the activity as part of their team leader challenge badge.

Needs approximately 30 minutes for prep time and explanations, when the cakes are in the oven you might want to do other activities to fill the time.

Banana Loaf Cake.
The ingredients are as follows:
140g butter
140g caster sugar (granulated will be fine too)
2 eggs
1tsp baking powder
2 very ripe bananas
Handful of banana chips for decorating (optional)

Mixing bowl, wooden spoons, spatula, baking paper, loaf tin, oven, scales.

Instructions

1. make sure that you have all the ingredients and utensils.
2. put oven on at 180C/Gas 4 to preheat (160C if fan)
3. Mix the butter and sugar until it is light and fluffy
4. Add the eggs with a tablespoon of flour and mix thoroughly
5. Fold in the rest of the flour, baking powder and bananas
6. Prep the loaf tin by lining with baking paper and lightly greasing the inside of the tin with butter so that the paper sticks to the tin.
7. Put the mixture in the prepared tin.
8. Bake in the oven for about 45-50 minutes. Clean your kitchen while you are waiting for it to cook.
9. Test with a skewer after 45 minutes, if it comes out clean it is cooked, otherwise return to oven for five minutes and test again, repeat until it is cooked.
10. When ready leave to cool on a wire rack for at least ten minutes.
11. Mix some icing sugar with a little water to make runny icing - pour over the top of the cake and decorate with the banana chips
