Black Bean Quesadilla

Description
Simple Mexican Quesadilla for cooking badge or part of a International food badge. It sounds more complicated than it is.
Resources
Will make a number of wraps- you might need to experiment with quantities
Sandwich press
tortillas (smaller ones are better)
Avocado (optional)
Taco seasoning (1 teaspoon at most per child)
Tin of chopped tomatoes
Grated cheese (substitute Vegan for food allergies)
coriander (chopped)
Can of black Beans (drained and washed)
Plate per child
Utensils to lift the quesadilla off the hot grill.

Instructions
Put pre prepared ingredients into separate bowls- cheese, coriander,
Have the children take turns to mash the beans using a fork, and the avocados if using them
Preheat a sandwich press/grill.
Give each child a tortilla wrap on a plate
Instruct them to fold it in half so they can see a line.
On half the tortilla they should add a thin layer of mashed beans, a sprinkle of taco seasoning, avocado, chopped tomatoes, coriander & finally cheese
Fold carefully in half.
Put a layer of greaseproof paper around the tortilla like a pocket to keep the contents in place- it does leak out while cooking, making your grill dirty, and a possible contamination risk if you have children with food allergies.
Adult helper assists them to lift the tortilla onto the grill which is hot.
cook for 3-4 minutes or until crisp ,and the cheese has melted.
Lift off the quesadilla carefully onto their plate.
Allow it to cool, and let them enjoy.
