Resources
Materials:
Oven
Baking tray x2
Baking / parchment paper
Large bowl
Spoon / electric whisk
Cookie cutters (Christmas shapes)
Ingredients:
• 225g unsalted butter
• 220g caster sugar
• 1½ teaspoon vanilla extract
• 1 large egg
• 450g Plain flour
• ¾ teaspoon baking powder
• ¾ teaspoon salt
• Icing tubes to decorate; or make up royal icing and colour it.
Instructions
1. Preheat oven to 180ﹾC (160ﹾC fan). Line 2 baking sheets with parchment paper.
2. Beat the butter and sugar in a large bowl until creamy.
3. Add egg and vanilla, beat until completely combined.
4. Add flour, baking powder, and salt.
5. Start mixing slowly, then beat until the flour is incorporated—it will be clumpy.
6. Dust work surface with flour, then scrape dough out of the bowl.
7. Roll out until ½ cm deep, sprinkling flour under and over the dough so it doesn’t stick.
8. Use cookie cutters to cut out shapes. Transfer these onto baking sheets. (Put a small hole in the cookie if you wish to hang them as a decoration.)
9. Bake for 10 minutes until the surface of the cookie is a pale golden colour and the edges are turning golden.
10. Allow cookies to cool completely on trays.
