A Jane's Patisserie recipe for chocolate crinkle cookies. Makes 18-20 cookies

Per batch of cookies

75g cocoa powder
225g caster sugar
75ml sunflower oil
3 eggs
200g plain flour
1 tsp baking powder
Pinch of sea salt
50g icing sugar

Instructions

1. In a large bowl, mix the cocoa powder, sugar, oil and eggs together. Add the flour, baking powder and salt and mix until a cookie dough is formed. Chill the bowl in the fridge for 20 minutes.

2. Preheat the oven to 190ºC/170ºC fan and line 2–3 large baking trays with parchment paper.

3. Add the icing sugar to a small bowl. Using a tablespoon, portion the cookies and roll each one into a ball. Then roll each one in the icing sugar. Place each cookie onto the lined trays, spaced well apart from each other.

4. Bake for 10 minutes. Leave to cool.
