Self-Saucing Lemon Pudding


Resources

• 50g Butter
• 200g Sugar
• 1 Lemon (zested)
• 100ml lemon juice (include the juice from the zested lemon)
• 3 eggs, separated
• 50g plain flour
• 250ml milk
• 1 teaspoon vanilla extract
• Icing sugar (to dust)

Instructions

Baking is a simple, fun activity that brings Brownies and their grownup helpers together for more than just sweet treats.
Through collaboration in the kitchen, Brownies practice measuring, taking turns, and using tools and equipment safely under a patient and encouraging eye.

Heat the oven to 180 C/fan 160C.
Beat butter, sugar and lemon zest until pale and fluffy.
Add the lemon juice, yolks, milk and vanilla slowly until you have a smooth batter.
Whisk the egg whites to firm (not stiff) and fold the two mixtures together. The batter will be quite runny.
Pour into a butter soufflé dish and bake in a baking tray half-filled with water for 40 to 50 minutes until browned on top, but wobbly!
Serve with cream or ice cream.
