Slice and Bake Cookie Rolls

• Brown Sugar Shortbread
• 110g butter, chilled and diced
• 50g light brown sugar
• 160g plain or spelt flour
Instructions
Whizz all the ingredients in a food processor. They will form fine crumbs at first and progress to a dough.
Sprinkle some demerara sugar on a clean worktop and roll the dough into a sausage (4-5 cm diameter).
Wrap this in parchment paper and chill in the fridge overnight.
Slice (to 1cm thick) and bake in a preheated oven 160C (140C fan).
Allow to cool on the tin.
A roll of cookies is a wonderful thing to keep in your freezer for another day or to give as a gift (with a nice baking instruction label).
