? Simple Kid-Friendly Tomato Soup . Serves: 4–6.

Time: 30–35 minutes, Difficulty: Very easy
Ingredients:
1 tbsp olive oil or butter
1 onion, finely chopped,
1 garlic clove, crushed (optional),
2 × 400g tins chopped tomatoes,
500ml vegetable stock,
1 tsp dried basil or mixed herbs,
1 tsp sugar (helps reduce the sharpness of the tomatoes),
Salt and pepper, to taste,
2 tbsp cream or milk (optional, for a creamy version)

Instructions

Method
Cook the onion: Heat the oil in a large saucepan. Add the onion and cook for 5 minutes, until soft.
Add the tomatoes: Add the garlic, chopped tomatoes, vegetable stock, herbs and sugar.
Simmer: Bring to a gentle boil, then reduce the heat and simmer for 15–20 minutes.
Blend: Carefully blend the soup with a stick blender until smooth. An adult should handle the hot soup/blender.
Make it creamy: Stir in the cream or milk if you'd like a milder, creamier soup.
Taste: Add a little salt and pepper if needed.
